High Protein Mini Chocolate Truffles
Ingredients
3/4 cup My Lifestyle Protein - Chocolate flavour 1/4 cup + 2 tbsp Unsweetened Cocoa Powder 2 tbsp Olive oil butter - melted 4 tbsp Skim Milk 1 tbsp Chia seeds 1 tsp Ground Almond 1tsp Shredded coconut Truffle cover of your choice, either 2 tbsp dark chocolate grated 2 tbsp shredded coconut 2 tbsp ground almond |
Method
1. Mix all dry ingredients together. Make a hole in the centre and add skim milk and melted butter. Make sure that the butter is not very hot. Mix with spatula until well combined. Cover and Let dough set for 30 min in the fridge so you can shape it.
2. Shape dough into 24 mini truffles (bite size) or make 12 large truffles. If it's too sticky to handle, add a bit more cocoa powder to the mix and if it is very dry, add a bit more milk. Taste your batter to ensure it's sweet enough; add a bit sweetener if needed.
3. Spread grated dark chocolate or shredded coconut or ground almond on a flat surface like a dinner plate and roll truffles in it.
4. Place truffles in a closed container and let them set for a few hours or overnight in the fridge.
